“Lavender Ginger Sugar Cookies for Amy”
2 cups unbleached flour
2 tablespoons dried lavender
½ teaspoon baking powder
¼ teaspoon salt
16 tablespoons unsalted butter (2 sticks) softened
1cup granulated sugar
1tablespoon light brown sugar
1 large egg
1 ½ teaspoons vanilla extract
½ cup crystallized ginger, finely chopped
Turbanado sugar (sugar in the raw) for rolling cookies in
Heat oven to 375*
1. Whisk flour, lavender, baking powder and salt together in a medium bowl. Set aside.
2. In kitchen aid, with paddle, beat butter, sugar, brown sugar until fluffy, add egg, vanilla and ginger. Add dry ingredients, beat until just mixed
3. Put sugar for rolling in, in a small bowl. Roll about a tablespoon of dough in a ball and then roll in sugar. (kind of press it in). Place on cookie sheet. Butter the bottom of a drinking glass and press the cookies till about ¾ inch thick.
4. Bake until golden brown around edges. 15 to 18 min. Cool on cookie sheet about 3 min.
